Honey-Mustard Dressing

I made some homemade chicken nuggets the other night and my daughter wanted honey mustard to go with them.  I didn’t have any, so I flipped through my new Weight Watchers cookbook (which is fantastic, btw) and found this very tasty recipe.

1/2 cup plain fat free yogurt (I used Greek yogurt)

4 tsp Dijon mustard

4 tsp honey

2 tsp white wine vinegar

1/2 tsp sugar

1/8 tsp salt

1/8 tsp pepper

Combine all ingredients in a small jar with tight-fitting lid.  Cover and shake well.  Use or refrigerate up to 1 week.

Makes 4 servings of 3 Tbsp each for 2 points plus

Kettle Corn

I got this recipe from Health magazine.  I only have the calorie information for each serving, so I can’t figure out the points.  If anyone has WW online and you can calculate it, let me know!  It was the BEST popcorn I’ve ever had!!!

2 Tbsp canola oil

1/4 cup raw sugar (turbinado)

1/2 cup popcorn kernels

1 tsp salt

Heat the oil in a large pot over medium high heat, then stir in the sugar and popcorn kernels.  Cover and shake the pot constantly until popping has slowed to once every 2-3 seconds.  Remove from heat, and continue to shake until the popping has stopped.  Pour into a large bowl, sprinkle with salt and allow to cool, stirring occasionally to break up large clumps. 

Makes 4 servings of 211 calories per serving.

If you like wings but haven’t been able to eat them due to the high points, this would be a good substitution.  Very tasty.

 

8 chicken legs on the bone (skin removed)

1/3 cup low sodium soy sauce

1/3 cup apple cider vinegar

1 small head of garlic, crushed

6 ground peppercorns

4 bay leaves

1 jalapeno, chopped (optional)

 

Marinate chicken in vinegar, soy sauce, garlic, jalapeno and pepper, for at least an hour (overnight is ideal).  Add chicken, 1/2 cup water, bay leaves and marinade into a deep nonstick skillet and cook on medium-low heat.  Cover and cook until the meat is tender, about 45 minutes.  Remove the cover and cook an additional 15 minutes, until the sauce thickens.  Discard bay leaves and serve over rice.

 

Makes 4 servings of 2 drumsticks each for 4 pts and 4 pts+

Chicken Fiesta Dip

A friend (thanks Dana!) told me about this recipe from Kraft.  It is fabulous!  Make sure to double it.  You don’t want to run out!

4 oz low fat cream cheese

1 cup reduced fat sour cream

1 cup reduced fat four cheese mexican style cheese, divided

1 pkt taco seasoning mix

4 green onions, sliced

1 1/2 cups chopped cooked chicken

1 small tomato, chopped

1/4 cup sliced black olives

Preheat oven to 350.  Mix cream cheese, sour cream, 1/2 cup of the shredded cheese, taco seasoning and onions in a medium bowl.  Stir in chicken.

Spoon into a casserole dish or pie plate and bake 25 minutes or until heated through.  Top with remaining 1/2 cup shredded cheese, the tomatoes, and olives.  Serve with chips, ritz crackers, wheat thins, veggies, etc…

Pumpkin Butter

I got this recipe from skinnytaste.  It is good!  Some of the uses she suggested were on toast or scones, in a latte, in oatmeal, cheesecake, to layered to make a yogurt parfait.

3 1/2 cups pumpkin puree or 1 (29 oz) can pumpkin (not pumpkin pie filling)

2 tsp vanilla

3/4 cup apple cider or apple juice

1 cup packed brown sugar

2 to 3 cinnamon sticks

1 to 2 tsp pumpkin pie spice

Combine all ingredients in a large saucepan; stir well.  Bring mixture to a boil.  Reduce heat and simmer for 30 to 40 minutes or until thickened.  Stir frequently.

Makes 14 servings of 1/4 cup each serving and 1.5 ww points

Rice Krispy Treats

I got this recipe from skinnytaste.  So good and so easy!

2 Tbsp light butter spread (Smart Balance Light)

4 cups or 10 oz mini marshmallows

6 cups Rice Krispies

Spray a 9×12 pan and set aside.

Heat a large saucepan on low heat.  Melt Butter in pan and add marshmallows.  Melt on low, stirring until completely melted; remove from heat.

Add Rice Krispies and stir until combined.  Press into pan.

Yields 16 servings for 2 ww points each.

A friend discovered these and I just had to share!  They are so delicious and come in 4 different flavors; Wild Raspberry, California Almond, Maple French Toast, and Original.  On the package they actually endorse Weight Watchers (in very small print) and 2 twists are only 1 point.  They are 30 calories per twist and are non dairy and contain no butter, eggs or yeast; good news for people with certain allergies.  They kind of taste like those cinnamon twists at Taco Bell.  The bag even says you can freeze them!  Wow!  I have found these at Wegmans and the commissary.

This isn’t a recipe, but it was something I came across on the laaloosh website and thought I’d share it.  It’s a low-calorie Peanut Butter substitute and isn’t too bad tasting, either!  I bought mine at Trader Joes, but some local health food stores may carry it also.  It has 100 calories, 2 grams of fat, and 2 grams of fiber and just 2 WW points per serving (2 Tbsp).  Regular peanut butter has 16 grams of fat where Better’n Peanut Butter has only 3 grams of fat per serving!  It comes in Original Creamy, Chocolate, and Low Sodium.

Taco Dip

8 oz 1/3 less fat Philadelphia cream cheese

8 oz reduced fat sour cream

16 oz jar mild salsa

1 packet taco seasoning

2 cups iceberg lettuce, shredded

2 large tomatoes, diced

1 cup reduced fat shredded cheddar cheese

1 small can black olives

In a large bowl combine cream cheese, sour cream, salsa and taco seasoning and mix well with an electric mixer.  Spread on the bottom of a 9×13 dish.  Top with lettuce, tomatoes, cheese and olives.  It would also be great with jalapenos, scallions, or avocados.  Serve with tortilla chips.

24 servings for 1.5 ww pts per serving.

White Bean-Pesto Dip

1 can white beans, rinsed and drained

1/3 cup coarsely chopped basil

3 Tbsp fresh lemon juice

1 Tbsp + 1 tsp olive oil

1 garlic clove

1/2 tsp salt

In a blender or food processor, puree all ingredients.  Let stand at room temperature, covered, until flavors are blended, 2-3 hours.

This tastes a lot like humus.  I used Navy beans and added an extra garlic clove.  Very tasty!
