I got this recipe from Fitness magazine.  It is so so so good!

2 cups all purpose flour

3/4 tsp baking soda

1/4 tsp salt

1 cup sugar

1/3 cup buttermilk

1/4 cup canola oil

2 Tbsp dark rum

3/4 cup chopped dried figs

1/4 cup chopped walnuts

2 eggs

2 large ripe bananas, mashed (about 1 cup)

Heat oven to 350.  Coat a 9×5 inch loaf pan with spray.

Sift together flour, baking soda and salt.  In a large bowl, beat eggs, sugar, banana, buttermilk, oil and rum until evenly blended.

Beat in flour mixture until just blended.  Stir in figs and walnuts.

Pour into pan and bake 60 minutes or until done. 

Makes 16 servings for 4 ww points each, 191 cal and 5g fat
