I got this recipe from skinnytaste.  It is good!  Some of the uses she suggested were on toast or scones, in a latte, in oatmeal, cheesecake, to layered to make a yogurt parfait.

3 1/2 cups pumpkin puree or 1 (29 oz) can pumpkin (not pumpkin pie filling)

2 tsp vanilla

3/4 cup apple cider or apple juice

1 cup packed brown sugar

2 to 3 cinnamon sticks

1 to 2 tsp pumpkin pie spice

Combine all ingredients in a large saucepan; stir well.  Bring mixture to a boil.  Reduce heat and simmer for 30 to 40 minutes or until thickened.  Stir frequently.

Makes 14 servings of 1/4 cup each serving and 1.5 ww points
