These were the best oatmeal cookies I’ve had in awhile!  We ate these on our long run during the water stops.

1/2 cup sugar

1/2 cup packed brown sugar

1/3 cup butter, softened

1 tsp vanilla

1/8 tsp salt

1 egg

1 cup all-purpose flour

1 cup regular oats

1/2 cup raisins (I used golden)

Preheat oven to 350

Combine first 6 ingredients in a large bowl; beat with a mixer at medium speed until light and fluffy.  Add flour and oats to sugar mixture; beat until well blended.  Stir in raisins.  Shape dough into 1 inch balls (about 1 tbsp each), and place 2 inches apart on baking sheets.

Bake for 15 minutes (cookies will not appear done).  Cool cookies on pans 3 minutes.  Remove cookies to wire rack and cool.

Yields 2 dozen cookies.  1 cookie is 2 points, 99 calories, 3 fat grams, and 0.6g fiber.
