Ginger-Orange Glazed Beets

1 ½ pounds beets, trimmed, peeled, and quartered (about 3 medium)

2 tsp olive oil

¼ tsp kosher salt

¼ tsp pepper

1 large navel orange

2 Tbsp honey

1 tsp grated peeled fresh ginger

Preheat oven to 425

Combine first 4 ingredients in a large bowl; toss well.  Place beet mixture on a jelly roll pan.  Bake at 425 for 35 minutes, stirring after 20 minutes.

While beets bake, grate 1 tsp rind and squeeze ½ cup juice from orange.  Combine orange rind, orange juice, honey, and ginger in a small saucepan; bring to a boil.  Boil, uncovered, 7 minutes or until mixture is syrupy and reduced to about ¼ cup.  Pour syrup over beets.
