Feta and spinach dip

4 cups fresh spinach, chopped *I used 1 box of frozen spinach thawed and squeezed

½ cup light cream cheese

½ cup fat free sour cream

¼ cup crumbled feta

¼ cup chives, fresh, minced, divided

2 tsp lemon juice

¼ tsp pepper

¼ tsp salt

Place spinach in a small saucepan with 2 cups of water.  Bring to a boil over high heat and then cook for 1 minute; drain well.

Place spinach, cream cheese, sour cream, feta, 2 Tbsp of chives, lemon juice and pepper in a blender; puree. *I just used my hand mixer and it worked fine*  Add salt. Sprinkle with remaining Tbsp of chives. Yields 3 tbsp per serving for 1 WW point.
