Easy Pear Crumble

6 Tbsp sugar

1 ½ Tbsp all-purpose flour

1 tsp cinnamon

½ tsp allspice

¼ tsp salt

6 pears, cut into 1 inch chunks

1/3 cup raisins

1 Tbsp lemon juice

6 amaretto cookies, coarsely chopped (I couldn’t find these to save my life.  So I got sugar free shortbread cookies instead and they were great!)

6 reduced fat gingersnap cookies, coarsely crushed

1 ½ Tbsp light stick butter, melted

  1. Preheat oven to 450.  Lightly spray 9×13 dish with cooking spray.
  2. To make the filling, combine the sugar, flour, cinnamon, allspice, and salt in a large bowl.  Add the pears, raisins, and lemon juice; toss to mix well.  Spoon into the baking dish.
  3. Sprinkle with the cookies and drizzle with the milted butter.  Bake unitl the pears are tender and the filling is bubbling, 35-40 minutes.  Cool slightly and serve warm or let stand at room temp up to 4 hours.

 

Yields ½ cup servings for 3 points each
