Cucumber and grilled tomato salad

3 english cucumbers, seeded and sliced

½ tsp salt

2 Tbsp red wine vinegar

1 Tbsp olive oil

1 Tbsp Dijon mustard

1 ½ tsp sugar

3 large ripe tomatoes

2 Tbsp red onion, minced

2 Tbsp chopped fresh parsley

¼  to ½ cup low fat feta

  1. Put sliced cucumbers in a large bowl, sprinkle with salt, then set aside for 30 minutes.  Spread the cucumbers out on a towel; pat dry and put back into dried bowl.
  2. Whisk the vinegar, olive oil, mustard, and sugar in a small bowl, then pour the dressing over the cucumbers and toss.
  3. Prepare the grill for cooking.  Halve each tomato and scoop out the seeds.  Spray with pam and grill each side 1-2 minutes.  Let cool and chop into chunks.  Add to the cucumbers, along with onions, parsley, and feta.

This wasn’t a weight watchers recipe, so I tweaked it a little and figured it be about ½ cup per serving for about 2 points.  Its very good!
