Chicken and Sausage Gumbo

2 tsp canola oil

4 oz turkey kielbasa, diced

1 onion, chopped

3 celery stalks, chopped

1 green bell pepper, chopped

4 garlic cloves, minced

2 Tbsp all purpose flour

2 cups chicken broth

1 cup chopped cooked chicken breast

1 can diced tomatoes with green pepper, celery and onions

1 cup frozen sliced okra

¼ tsp salt

2 cups hot cooked brown rice

  1. Heat oil in large saucepan over med high heat.  Add the kielbasa, onion, celery, bell pepper, and garlic; cook, stirring often, until soft, about 5 minutes.  Add the flour and cook stirring constantly, 1 minute.
  2. Stir in the broth, chicken, tomatoes, and okra and bring to a boil.  Reduce the heat and simmer, uncovered, until slightly thickened, about 15 minutes.  Remove from heat and stir in the salt.  Divide the gumbo among 4 bowls an top each with ½ cup of rice.
