Potato Salad

1 ½ pounds cooked red potatoes

3 slices cooked and crumbled turkey bacon

¼ cup reduced calorie mayo

2 Tbsp red wine vinegar

2 Tbsp parsley, fresh, chopped

½ tsp salt

¼ tsp pepper

½ cup scallions, chopped

Combine mayo, vinegar, parsley, salt and pepper.  Toss dressing with cooked potatoes, bacon and scallions.
